Tart Pear and Ginger to Cascina Rosa


Finalmente è Giugno! Il che significa, secondo me, che ormai è estate! Giugno porta con se tutte le festicciole e sagre dei dintorni, le prime gite in piscina, le prime tintarelle...insomma ti prepara per il solleone di Agosto.
E a proposito di eventi, domani a Milano si terrà Cascina Rosa aperta, dalle 9.00 alle 17.00 presso Cascina Rosa, via Vanzetti 5, Milano.
Il programma è interessante, ci saranno conferenze a cui interverrà tra gli altri il dott. Franco Berrino, si potranno praticare attività fisiche e provare massaggi shiatsu, tuina e molti altri.
E poi, cosa per me più importante...la pappa!! Si fa colazione, pranzo e merenda inseme, il tutto preparato dallo chef dell'associazione L'ordine dell'universo ( www.lordinedelluniverso.it ) che, a mio parere, è uno dei migliori nel suo campo.

Per l'occasione si possono portare dolci fatti in casa, che verranno venduti e il cui ricavato andrà al progetto Diana 5!
L'anno scorso non ero riuscita a preparare nulla ma stavolta si!! Per l'occasione ho made a tart with pears and ginger. Since I had to prepare now I have avoided too delicate fruits like strawberries and fresh cherries ... although I love the idea!

Here is the recipe, of course according to the criteria of macrobiotics!


Kamut flour 400 g 100 g rice flour 100 grams almond flour


5 tablespoons corn oil 3 tablespoons of barley malt
300 ml apple juice 2 pears

a large piece of fresh ginger ( about 10 grams) 1 teaspoon of agar agar


bio peel of one lemon 1 teaspoon baking


sea salt Preparation:
the pie is always the same: first the dry ingredients ie flour, baking soda and salt. We also add the lemon peel grated keep aside a little for cooking the pears. Add oil, work well with your hands. Then also add a tablespoon of malt and blended. Mix with apple juice until the mixture is smooth and let rest in refrigerator for half an hour.
Meanwhile wash and peel the pears. Tagliamole into quarters and cuociamole for 15 minutes with 100 ml of apple juice, 1 tablespoon of malt, a bit of lemon peel and ginger.

have over the mixture of dried beans or silver (there are household goods stores) that would prevent the pie to grow too. So bake the dough for 15 minutes at 180 degrees.
Meanwhile, drain the pears from taking part in the cooking liquid.
Cut the pears into slices and let it cool.
After 15 minutes of cooking, remove the tart from the oven. Eliminate beans from mixing.
Spread a tablespoon of barley malt in the bottom of the tart and then dispose ourselves over the slices of pear. If you want to decorate some of the other holes left with pasta or hazelnuts, almonds, or whatever you like.
go in the oven another 10 minutes more at 180 degrees.
When the cake is golden brown remove from oven and let cool. At this point Prepare the jelly using the cooking liquid for pears, previously filtered.
then add the liquid 1 teaspoon agar agar powder and bring to a boil. Spegnamo and pour the liquid on the cake. When cool, it will become jelly.

Council to prepare the cake a little early because, like all the pies ... rests more than is good!

finally begin to see the strawberries ... the real ones, not the "pumpkins" that are around already in February! In my garden are still green, but with the cold weather of recent days is understandable percu ... non vedo l'ora di riprovare questa tortina semplicissima con le mie fragoline.
E' una ricetta molto sana e macrobiotica, percui è ottima se siete in un periodo di disintossicazione tipicamente primaverile ma avete voglia di un dolcetto da forno. E' completamente senza zucchero, ma davvero il gusto dolce non manca.

La ricetta è dello chef dell'ordine dell'universo, un'associazione macrobiotica di Milano che organizza spesso cene a Casina Rosa, dove partecipa anche il Dott. Berrino con interessantissimi interventi.
Vi copio la ricetta pari pari, ma se siete incuriositi visitate il sito per intero perchè ci sono molte iniziative interessanti come la prossima, a cui io parteciperò sicuramente:

FOR BASE
3 cups oatmeal 1 ½

whole wheat flour 3 tablespoons corn oil Pinch of sea salt

2 cups apple juice

Mix dry ingredients together first, then add oil and mix with your hands. Add the apple juice and mix well the mixture and roll it out in a baking pan previously greased. Bake for 30 minutes at 180 degrees.

If you plan to stuff them with cooked fruit or mashed pumpkin cook for 10-15 minutes alone, farcitela and put it back in the oven for another 25-30 minutes. MEANWHILE

CLEAN strawberries and cut them in half '
PASTRY CREAM
3 apples, peeled and sliced \u200b\u200b
½ cup raisins or dried apricots

2 cups water 2 cups apple juice Pinch of sea salt

3 teaspoons of almond cream white
Agar agar (for the quantities read the instructions on the package)

Put all ingredients in a saucepan and once brought to a boil, then cook for about ten minutes.
Allow to cool until the mixture will not be hardened. Now put everything in a blender and blend fino ad ottenere una crema.



ASSEMBLAGGIO
Versare la crema sulla torta, sistemare le fragole sopra la crema e volendo si possono lucidare le fragole con un po’ di succo di mela e kuzu .

No no, non hanno niente a che fare con gli involtini primavera che si mangiano al ristorante cinese!!
Preparo spesso involtini di questo genere usando sia il cavolo cinese che la verza, vengono sempre buonissimi, sarà che mi piacciono anche da vedere e mi invogliano!
Anche se non sembra, siamo in primavera inoltrata e in giardino la menta sta avendo il sopravvento, percui ogni tanto la utilizzo nelle preparazioni, è very cool and I like it! For 4 people (12 rolls)
12 leaves of Chinese cabbage
200 g boiled beans or boiled chickpeas
100 g cooked brown rice (I had advanced)
1 tablespoon oatmeal
4 fresh mint leaves

1 tablespoon tamari 1 tablespoon olive oil e.v.o.
pangrattato

Preparazione:
sbollentate in acqua salata le foglie di cavolo, per 1-2 minuti al massimo. Mettete poi in frullatore il riso, i fagioli, la menta tagliuzzata finemente, il tamari. Frullate, poi assaggiate e regolate di sale. Aggiungete anche i fiocchi d'avena che aiuteranno l'impasto a restare più sodo. Frullate per un altro mezzo minuto.
Scolate le foglie di cavolo e disponeteli su fogli di carta assorbente per togliere l'acqua in eccesso. Ponete un cucchiaio di ripieno sulla parte bianca della foglia (la costa) e arrotolate. Disponete gli involtini un una teglia unta con olio e.v.o. e cospargeteli di pangrattato e un filo di olio.
Metteteli in forno a 180° per una ventina di minuti poi se preferite leave several minutes under the grill.
